Tree Fruit Recipes in a Flash
This months' "Produce of the Month" are Tree Fruits, and right now is tree fruit season. With fun and creativity in mind I'm going to share different genres of recipes that highlight, peaches, plums, nectarines, and apricots. I'm always mindful of trying to keep the recipes quick and easy. As always, you know it has to be yummy or I'll let you know it was a flop.
First up, Nectarine popsicles! But with some hidden spinach to give some much needed immunity. The kids will love these! The only downside is it takes half a day to freeze, so not the best last minute choice if a quick snack is needed right away.
Plum Summer Salad
A Plum Summer Salad is fast, fresh, and healthy. Try out this simple and fresh plum salad with some of our juicy red plums, recipe courtesy of Foodandwine.com. Don't forget to add the basil, its what makes this salad unique.
You can't go wrong with a peach cobbler or peach crisp. What's the difference? Apparently a peach cobbler has a biscuit or pie topping and then the peach crisp has more of an oat, nut, spice mixture topping. Both are fabulous in their own ways. I plan to make the Peach Crisp because we have gluten sensitivities. Either way, our summer peaches will be perfect for this recipe. P.S. I have never blanched a peach to de-skin before, so we shall see if it's as easy as it sounds.
I don't know about you, but since we have been eating a super healthy diet for my daughter's eczema, I'm finding it hard to find condiments that work for us. Also, I'm just plain bored of the regular bbq sauce or garlic salt and pepper, so If I can easily make a glaze with something super healthy and literally 3 ingredients that would be awesome! So here it goes. Try this simple apricot glaze on chicken or pork and throw it on the barby.
Tree fruits can be used in a variety of recipes, so challenge yourself to try something you haven't made before. All of these recipes were new to me and I have not made until now. But when in doubt, especially for a healthy snack, put down the chips and choose a sweet juicy plum or apricot instead. You don't need to do anything special to enjoy the fruits of the season.
