June's Produce of the month is Citrus Fruits. When I think of citrus, immediately dessert and breakfast items come to mind. Citrus usually complements recipes on the savory side. One of my favorites is a Citrus Avocado Salsa that pairs with chicken or fish. It's one of the easiest ways to dress up a meal. It turns a simple dish fancy.
You can add the avocado salsa directly on top of meat, sprinkle on tacos, or maybe add a little on top of a salad and your guests, or in my case, my kids, will be impressed!
This refreshing salsa can be prepared a few hours before the main coarse, but not too early seeing as we don't want the avocado to brown. I suppose you could put everything together except the avocado the night before and just cut it up and add it at the last minute.
The first meal I plan to make featuring this salsa will be a salmon filet served with a side of homemade garlic potato fries. If you want something a little less starchy than potato you could use cauliflower rice. I'll be posting pics of the different meals I use the salsa on throughout the month. Keep you posted!
